Il Bosco delle Galline Volanti is a restaurant located in a renovated building that, at the end of the 19th century, was the first wine cooperative of Barolo — an iconic site in the history of this wine. The space now hosts the restaurant of the namesake agriturismo, serving dishes prepared with vegetables from their synergistic garden and ingredients from the small-scale farm network “I Giusti Fattori,” as well as family wines from the Germano winery, founded in 1908 and based in the former 17th-century bishopric estates of La Morra. Guests can book guided tastings and cooking classes, all centered around their garden’s produce. Their signature specialty is ice cream made with milk from the Fusero farm. To highlight the quality of the milk and cream used, only freshly churned gelato is served, with a single fior di latte base, to which guests can add various toppings made with their fruit or special garnishes such as Barolo grappa with mountain honey, Barolo Chinato with raisins, and many more.
